Ham and Cheese Sliders

These were amazing!

Ham and Cheese Sliders

24 good white dinner rolls
24 pieces good honey ham (I used Honeybaked Ham)
24 small slices Swiss cheese (I used cheddar for Jeff's sandwiches) 
1/3 cup mayonnaise
1/3 cup miracle whip

Poppy Seed Sauce

1 Tablespoon poppy seeds (I didn't add this to the sauce, but just sprinkled some on the tops... not everyone in my family likes poppy seeds)
1 1/2 Tablespoons yellow mustard
1/2 cup butter, melted
1 Tablespoon minced onion
1/2 teaspoon Worcestershire sauce

In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 15-20 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

** sandwiches can be assembled a day ahead and kept in the fridge ready to bake.

The Marlboro Man Sandwich

I made these for our Superbowl "dinner" and Jeff loved it. He even requested the leftovers for lunch the next day, which (in our house) is something that never happens! I was very excited that the sandwich was a hit.

1 whole large (or 2 small) onions
2 sticks butter
2-3 pounds cube steak
Lawry's seasoned salt
½ cups (approximately) worcestershire sauce
tabasco sauce, to taste
4 whole french/deli rolls

Slice onions and cook in 1/4 stick butter until soft and light brown. Remove and set aside. Slice cube steak against the grain. Season with Lawry’s. Heat 2 tablespoons butter over high heat (in same skillet) until melted and beginning to brown. Add meat in single layer. Cook one side until brown, then flip and cook until brown, about a minute on both sides. Add 1/2 cup (at least) Worcestershire sauce, 5 to 6 shakes Tabasco, and 2 tablespoons butter. Add cooked onions. Stir to combine. Butter halved French rolls and brown in skillet. To assemble, lay bottom half of French roll on plate. Place meat mixture, followed by a spoonful of juice from the pan. Top with other half of roll, cut in half, and eat!

Classic & Easy Tuna Melt

I had this for lunch today and it was so good. I thought tuna melts were only for the oven. This way is so much easier.

1 (6.4 oz.) pouch StarKist® Chunk Light or Albacore in water
2 tbsp. chopped onion
8 slices bread, toasted
1/2 cup mayonnaise
1-1/2 tbsp. chopped celery
4 slices cheese

In a mixing bowl, combine tuna, mayonnaise, onion, and celery; mix well. Top 4 of the bread slices each with 1 slice of cheese. Spread tuna mixture over cheese slices and top with remaining bread slices. Spread each sandwich with additional mayonnaise; place in skillet. Cook on medium heat until lightly browned on both sides.

Tip: carrot and cucumber may be substituted for onion and celery.
