Shoyu Chicken

My mom made this for us growing up. It's a wonderful meal that reminds me of home.

Menu:

Shoyu Chicken
White Rice
Salad or Veggies


Shoyu Chicken

5 lbs. of chicken thighs
2 cups sugar
2 cups shoyu (Aloha brand Soy Sauce)
2/3 cup cider vinegar
1 ½ inch length of ginger cut into 1/8" slices (remove before serving)
3 clove garlic - chopped
(or you can buy a jar of chopped garlic & use about ½ to 1 tsp. of the chopped garlic)

Place sugar, shoyu, & vinegar into a sauce pan and heat until the sugar
dissolves. Add the ginger & chopped garlic & stir. Place chicken (skin side up) in a large pan. Pour sauce over chicken. Cover with aluminum foil & cook for 1 & 1/2 hours at 350 degrees (uncover for last 1/2 hour). Remove ginger slices. Serve over rice with your choice of salad or veggies.

We have a rice cooker, so I always make my sticky white rice in there and don't have a stovetop recipe for it. Sorry.

The only problem is that they aren't the healthiest and I started trying to eat better. I haven't attempted to make them fat free or low fat.
We have made these off that blog:
the best chicken parmesan ever (very good)
southwestern rice bowls (we loved it)
quesadillas (a healthy, yet tasty version) (really good and the one healthy recipe:)
coconut-peanut curry (ok, it was my first time trying curry, I don't know if I am a big fan of curry in general)
mexican lasagna (good, it was hard to tell if we were eating speghetti or mexican food)
cheesy potato cakes (delicious!)
easy chicken roll-ups (so good, we used our leftover thanksgiving turkey instead of chicken) then with turkey gravy)
I have also used some recipes from the Rachel Ray show...We have really enjoyed them. I will give them to you later because Robbie is going crazy and needs to eat now! Good luck with some new recipes.....
Oh, a lot of these recipes were time consuming, so I would double the recipes so we could at least have it for 2 days and I wouldn't have to cook except for every other day.

Hey Lisa, I am going to have to try some of these recipes. They sound delicious! Can you use any soy sauce in this one? Also, I use a rice cooker too. Lately I have just used the store brand rice but I LOVE sticky rice so I was wondering what kind you use. Do you do anything besides put the rice and water in and turn it on?

You can use any kind of Soy sauce, but ALOHA Shoyu does taste the best. It will definitely give it a different flavor if you use another kind. Still good flavor I'm sure, but probably stronger (like Kikoman). For rice I use Calrose, which they sell in BIG bags at Costco. I only put rice and water in my rice cooker, then turn it on. It always comes out great. I never eat white rice plain, I always have to have something on it, like gravy, sauce (from the Shoyu Chicken) or Chili.
